of Christmas my true love gave to me…… Eleven Piper's Piping.
Thyme Apple cocktail
2 Sweet Apples
3 Fresh Thyme Sprigs
1 Lemon Juiced
1.5 oz Bourbon
3 oz Soda Water
1 tblsp Thyme Honey
1/2 c Water
Ice
Slice the 2 apples. Take 3 slices and toss in lemon juice in a bowl until well coated and set aside. In saucepan bring to a soft boil the rest of the apples (diced), water, honey, and 2 sprigs of Thyme and then cook on simmer for 10-15 minutes. (Apples are soft and juice is caramelized) Turn off and cool ti room temperature. Muddle apples/juice in bottom of shaker until all juices are released. Add ice and shake for 10-15 seconds. In cocktail glass put in 2-3 large cubes of ice. Rim glass with Thyme Honey. Pour in 3 oz of apple syrup from shaker, Bourbon, 1 oz Lemon juice from the bowl, and Soda Water into glass and stir. Garnish with 1 sprig and the 3 apple slices.
